Step 1
Pour the warm water into a bowl. Add yeast and mix. Let stand for 5 minutes.

Put flour, salt and sugar in a bowl of the stand mixer fitted with Dough Hook. Turn the Speed Control Lever to 2 and mix for 30 seconds.

Add yeast mixture, milk, beaten eggs and melted butter. Kneed on speed 2 for 5 minutes.
Step 4
Let the dough rise for 40 minutes in a bowl covered with damp towel.
Step 5
Turn the dough out onto a floured work surface and briefly knead it by hand.
Step 6
Divide into 8 pieces of equal size.
Step 7
Form into balls and place on a baking sheet linked with parchment paper. Let rise for 90 minutes.
Step 8
Brush the buns with the egg yolks mixed with a little water and sprinkle with sesame seeds.
Step 9
Bake for 15-20 minutes in a 180C pre-heated oven.

Cool on a wire rack.
