This recipe makes 15 choux.
Step 1
Melt the butter and water over medium heat. Stir in the flour with a wooden spoon until a soft dough forms.
Step 2
Add the eggs one at a time while mixing the dough on high speed.
Step 3
Fold in the thyme, black pepper, cheese and garlic.
Step 4
Transfer the dough to a piping bag and pipe the choux onto a lined baking sheet.
Step 5
Press down the choux with a wet finger so they come out of the oven perfectly round.
Step 6
Brush the choux with a beaten egg and top off with freshly grated cheese.
Step 7
Bake for 15 minutes in a 190 degree preheated oven. Let them cool off on a wire rack.
